Six years on bar at Market Lane and St. Ali in Melbourne before coming home. Q-grader, SCA Authorised Trainer, and the palate that signs off every roast curve. On the Giesen by 06:30 on Tuesdays and Thursdays.

Co-founder & Green Buyer
Trained at De Beren Coffee in Utrecht and ran their green-buying programme for two years. Every farm contract, every January visit and every washed African decision goes through her.

Eleni Kalogeropoulou

Lead Barista
Joined from Taf Coffee in 2021. Third place at the 2024 Greek Brewers Cup with a washed Konga — the first BrewCraft barista on a national podium. Runs the bar most afternoons.

Head of Wholesale & Education
Looks after 46 cafés across Greece and Cyprus, drives the Niche-fitted calibration van, and teaches Espresso at Home on the second Sunday of every month.

Roaster, Sample Lab
Apprenticed under Anneke for two years and now runs the 1kg sample roaster, profiling every green lot before it reaches the W6A. Manages the cupping calendar and staff certifications.

How we hire

Warmth first, skill second. Every new barista spends their first fortnight on the bar with Eleni and their first month cupping twice a week, whether they arrive from another roastery or from a bookshop.

How we hire
Visited Thessaloniki for three days and went to BrewCraft every morning. The flight of three Ethiopia lots that Eleni put together changed how I think about Ethiopian coffee.
